I....am a genius. I'm sorry. I know that sounds conceited and egotistical, but, it's true.

I was frying up some wings, 7 to be exact, for dinner. They were cooking away, and had maybe 5 minutes left. I went to the fridge to get the makings for wing sauce, (buffalo of course), and I saw it.

Bacon.

I quickly gave a strip of bacon a quick dredge in flour and threw it in the pan with the wings.

When everything was done, into the large bowl it all went, wings and bacon. I then poured the buffalo sauce over it all. I shook the bowl and tossed the wings to coat generously. (I love me some hot wings).

Dumping it all onto a plate, I just couldn't wait. I picked up that bacon. It was a thick cut slice. It was cooked, but not crispy. It had a little bite to it. (only way to eat bacon)

I took a bite. And another, and another. Then it was gone.

I looked at my wings, and wished they were bacon.

That's right kids.

Pan fried buffalo bacon.

Tomorrow, I'm making a grilled chicken sandwich with buffalo bacon on it. On a hoagie roll. It will be good.
